
Inspired by Joel's Pork Shot recipe, on Mother's Day we created these Brekkie Shots for a simple and delicious breakfast!
Ingredients:
4 ripe tomatoes
4 rashers of bacon
Salt & pepper to taste
A good shake of your favourite BBQ Rub (we used Swamp Boys Original Rub)
If you need to cook more/less use more/less tomatoes & bacon!
Directions:
STEP ONE
Hollow out each of the tomatoes and season the inside of them with salt & pepper
TIP: Take a small slice off the bottom of each tomato so that it will sit flat on the grill
STEP TWO
Wrap each tomato in a rasher of bacon and secure it with a toothpick (or a Grill Pin if you have them)
STEP THREE
Crack one egg into a small bowl then pour it into a tomato. Repeat so that each tomato has an egg in it
TIP: If you have large tomatoes or small eggs by all means crack the egg straight into the tomato! We did this to begin with but made a mess when there was too much egg for the tomato which is why we suggest doing it as above!
STEP FOUR
Sprinkle your chosen rub over the top of your Brekkie Shot
STEP FIVE
Place Brekkie Shots in a preheated Weber (10-15 minutes preheated to 350f+) using a Kettle Kone set up for indirect cooking. Place the lid on and cook for 40-45 minutes rotating the lid every 10-12 minutes if you're using a smoking timber for even distribution of the smoke
STEP SIX
Remove from grill once the egg is cooked to your liking, allow to cool slightly before eating & enjoy!
